Here's what I use:
Spring Mix lettuce or Baby Spinach
1/4 cup of toasted walnuts
1 pear or 1 apple diced (whichever I have)
1/4 cup of diced jalepeno jack cheese
Dressing/Viniagrette
1 tablespoon of a sugar free jam (I love Blackberry or Rasberry) only 15 calories.
4 tablespoons of fresh orange or lemon juice. (Substitute red wine vinegar also)
4 tablespoons of extra virgin olive oil.
OMG, I'm getting hungry =)
